MAURICIO LEONExecutive Chef, soleaA member of the solea culinary team since its opening in October 2003, Chef Leon was promoted to Sous Chef in March 2005. Chef Leon graduated from the Culinary Institute of America, and he considers the Mexico culinary scene his forte having worked at such locations as the Hotel Occidental Grand Flamenco Xcaet and Pujol Restaurant. Chef Leon has also had a successful stint at l'essentiel restaurant in Chambery, France and was instrumental in the opening of SolToro Tequila Grill in Uncasville, Connecticut.
